YELLOW PEPPER SOUP
with Avocado Cream
T his soup can be made with red bell peppers, yellow bell peppers, or a combination of bell peppers. But when it’s made with all yellow peppers, with its bright taste, it’s like sunshine in a bowl.

5 large yellow bell peppers, ribs, stems, and seeds removed
2 leeks, white and pale green parts only, washed well
1 large Spanish onion, peeled
2 celery ribs
1 medium carrot, peeled
6 garlic cloves, peeled
6 tablespoons butter
6 tablespoons all-purpose flour
4 cups chicken stock or canned chicken broth
6 to 8 sprigs fresh thyme, tied with string, or 2 teaspoons dried thyme
1 cup heavy cream or half-and-half
4 teaspoons sea salt or kosher salt
1 teaspoon freshly ground black pepper
¼ teaspoon cayenne
