Duck and Coconut Curry
The use of sour vinegar in a curry may seem an unusual addition, but it can provide an excellent foil for rich coconut milk and fatty meat such as duck. In India, it is often found in regional cooking that has been influenced by other cultures.
SERVES 6
CURRY PASTE
1½ teaspoons coriander seeds
1 teaspoon cardamom seeds
1 teaspoon fenugreek seeds
1 teaspoon brown mustard seeds
10 black peppercorns
1 red onion, chopped
2 garlic cloves, crushed
4 red chillies, seeded, chopped
2 coriander (cilantro) roots, chopped
2 teaspoons grated ginger
2 teaspoons garam masala
¼ teaspoon ground turmeric
2 teaspoons tamarind purée
