Slice the sea bass fillets in half and set aside.

Put the extra virgin olive oil, lemon juice and a little salt and pepper in a frying pan over a medium heat. Add all the vegetables and cook for a couple of minutes, shaking the pan from time to time. Remove the vegetables with a slotted spoon and arrange on a serving dish.

Put the pan back on the heat and add 8 tablespoons of water. Place the fish fillets in the pan and cook on each side for a couple of minutes, shaking the pan but being careful not to break the fish. Carefully remove the fish and arrange over the vegetables on the serving platter.

Place the pan, with its cooking liquid, back on the heat, shaking it for a few seconds, then pour the sauce over the fish and vegetables, garnish, if desired, and serve immediately.
