ROCOTO

Also called manzano, or chili apple, due to its shape. This pungent pepper is the only pepper in the world with black seeds and its fire engine red color is a warning of its five-alarm heat. Even diehard chili heads should proceed with caution when using this chili. In Peruvian groceries they are sold whole in jars and cans or frozen and as a paste. Rocoto are bell pepper—shaped, about the size of a plum tomato with shiny red skins. For a real mouth sizzler try them Peruvian-style as rocoto rellenos. Cut half an inch from the tops, scrape out the seeds, rinse and stuff with cheese or a ground meat filling, and bake. Rocoto adds flavor and fire to everything from stews and grilled meats to potato dishes and creamy sauces—the best known of these is the cheese and chili sauce for papas Huancaína. This very picante pepper is also toned down in sauces, blended with peaches, pineapple, or tamarind. Roasted chicken is delicious smeared with rocoto-peach sauce. Look for Amazonas’ plain or fruit-flavored rocoto salsas and tabasco in 7-ounce bottles and whole peppers in 13-ounce jars, 20-ounce cans, or frozen in 1-pound bags. Tambo de Oro brand has whole frozen rocoto in 12-ounce bags and the paste in 8.5-ounce jars. Doña Isabel, Huascaran, and Phoebe brands have 6.5-ounce jars of rocoto paste and Huascaran also offers whole rocoto in 13-ounce jars as well as pickled montana (monkey chilies) in 13-ounce jars. Andes Food has rocoto mitades, halved peppers in 8-and 13-ounce jars, and rocoto salsa, chutney, and pickles in 6.5- and 13-ounce jars. All the major exporters sell mixed chilies, good for sampling several varieties. These are often labeled “ceviche mezcla de ajices,” or mixed peppers for ceviche. They’re cut into thin rings and added to ceviche citrus marinades for flavor and heat, a contrast to the cool seafood. They are also used in cooking and to garnish salads and sandwiches.
