Another dish our family loves having for dinner.
Beef Stroganoff
INGREDIENTS
1 onion, thinly sliced
1 tbsp olive oil
6–8 flat-leaf parsley stalks, stalks and leaves chopped separately
2 garlic cloves, chopped
400 g beef loin, thinly sliced
1–2 tsp paprika (or 1 tsp paprika and 1 tsp smoked paprika)
2 tbsp tomato paste
½ cup dry white wine or water
6–8 button mushrooms, thinly sliced
3 tbsp sour cream
sea salt and freshly ground pepper
steamed rice or cooked pasta, to serve
METHOD
Fry the onion in the olive oil in a large saucepan over medium heat for 5 minutes. Add the parsley stalks and cook for 5 minutes until the onions are translucent. Add the garlic and meat and cook, stirring occasionally, for 10 minutes until the meat is browned. Add the paprika and tomato paste, cook for 5 minutes, pour in the wine or water and, after about 5 minutes, add the mushrooms and simmer for 8–10 minutes. Add a little water if it is too dry and cook for another 5 minutes. Stir in the sour cream, reduce heat to low and simmer for 5 minutes. Adjust seasonings to taste. Add the parsley leaves and serve with rice or pasta.
