STUFFED CABBAGE ROLLS
One of the first times I cooked on TV, I went along to the studio before the big day to watch Lorraine Fitzmaurice – who owns Blazing Salads, a fantastic deli in Dublin – cook stuffed cabbage rolls. I hadn’t had my lunch, so once the show was over I joined the crew in the scramble to get my hands on some of the leftovers. Here’s my take on this surprisingly tasty vegetarian dish.
SERVES 4–6 (V)
1 Savoy cabbage
1 tbsp olive oil
1 large onion, peeled and finely chopped
2 large garlic cloves, peeled and finely chopped
250g (9oz) mushrooms, finely chopped
Small bunch of parsley, finely chopped
1 tsp thyme leaves
75g (2½oz) goat’s cheese, crumbled
50g (2oz) walnuts, toasted and roughly chopped
300g (11oz) cooked bulgur wheat (100g/3½oz uncooked)
Sea salt and ground black pepper
For the tomato sauce
1 tbsp olive oil
1 onion, peeled and finely chopped
2 × 400g (14oz) tins of chopped tomatoes
1 tbsp honey
1 tbsp balsamic vinegar
