Italian Chicken Sausage Risotto
The combination of sweet onions, an Italian chicken sausage, thyme and garlic is an amazing savory base for this quite traditional risotto recipe.

Serves: 4
Nutritional value (per serving): 587 kcal (fat – 14.2g, carbohydrate – 70.8g, protein – 31g, fibre – 3.3g)
Ingredients:
- Olive oil – 1 tbsp
- 1 package of Italian Chicken Sausage
- Chopped sweet onions -1 cup
- Minced fresh garlic – 1 tbsp
- Dried thyme – ½ tbsp
- Arborio rice -1 ¼ cup
- Dry white wine – 1 cup
- Chicken low-sodium broth – 3 ½ cup
- Frozen petite sweet peas – 1 cup
- Grated Parmesan cheese – ¼ cup
- Ground black pepper – ¼ tsp
Directions: Take a saucepan or pan, heat olive oil in it and sauté Italian sausage along with the onion until the latter becomes translucent, which will take around 3 mins. The next ingredients to add are thyme and garlic. They should be fried for approximately a half of minute. Then it is time to add rice and wine and continue simmering until the wine is absorbed. Now you should add 3 cups of broth and cook on low heat for about 15 mins until the broth is also absorbed. Continue adding the remaining broth and stirring for 5 mins. When you notice that the rice is soft and creamy enough, it is time to put in such ingredients as peas and Parmesan cheese. Finally, season your risotto with ground pepper and garnish with some extra cheese and parsley.
