DEBBIE’S TIP: Salmon is not indigenous to Greece, but I do enjoy this recipe with wild-caught salmon from time to time, especially when I want to mix it up.

A TRIP TO THE MONASTERY

Just outside of the beach village of Fanari, in Porto Lagos, there is a monastery that is open to the public each day. Built on an island in the middle of a lake and surrounded by farmland, the white buildings appear as a haven to weary travelers. One afternoon, on a whim, we decided to head over there for a quick tour. During our visit, we encountered a man we affectionately refer to as the Mysterious Monk, who was visiting from a monastery called Agios Oros atop the famous Mount Athos, “the holy mountain.” He had arrived there with other visiting monks in anticipation of the largest holy holiday of the year in the Greek Orthodox faith, the Day of the Virgin Mary, August 15th. The Mysterious Monk seemed to be expecting us, and he welcomed us with open arms. In general, monks from Agios Oros are not to be photographed; however, he took a liking to us and allowed us to take photos of him as long we agreed not to show his face. The experience Peter, our photographer Jon, and I shared there together with our new friend, the Mysterious Monk, was transcendent, and though we have tried, we have yet to find words that adequately express or explain what occurred that afternoon. All I can say is that we had a profound spiritual experience that will forever live in our hearts and souls.
