Directions:

In a prepared sauté pan, heat the oil on medium-high heat. Add the prepared garlic and stir for 1 to 2 minutes, until lightly browned. Add the eggplant and tomatoes, stir well, and simmer, stirring occasionally, for about 20 minutes, until the eggplant is tender.

Bring a pot of water that is salted to boil. Add in the spaghetti cook till al dente, following the instructions on the package.

Just before the pasta is ready, mash the eggplant and tomatoes together, stir in the basil olives, season with red pepper flakes salt. Cook for 5 minutes longer.

Drain the spaghetti move to a bowl. Put the sauce on the top sprinkle with the cheese. Serve immediately.
