Recipe 27: Pesto Chicken Florentine

Creamy pasta with chicken makes a delicious weekday meal. Serve with some garlic bread.

Serving Size: 6

Cooking Time: 20 minutes

Ingredients:

2 oz. of penne pasta

2 tbsp. olive oil

2 minced garlic cloves

4 cubed chicken breasts

Salt and pepper to taste

2 cups sliced mushrooms

1 cup broccoli florets

6 oz. of baby spinach

2 cups alfredo sauce

¼ cup pesto

¼ cup Romano cheese

Directions:

In a large pot, prepare the pasta according to directions.

Heat the oil in a large skillet.

Season the chicken with salt and pepper.

Sauté the garlic for 2 minutes, then add the cubed chicken

Brown the chicken on all sides for 5 minutes on low heat.

Stir in the mushrooms and broccoli and cook for 8 minutes, until the chicken is no longer pink and the vegetables are done.

Add the alfredo sauce and stir the pesto and spinach into the skillet.

Cook for 5 minutes on low. 9. Stir in the cheese and remove from heat.
