Peri Peri Sauce

This sauce is quick to whip up, tasty and hot.

Yields: 1 cup

Time: 35 mins.

Ingredients • 8 red chilies, large

• 2 scotch bonnet peppers

• 4 cloves of garlic, separated and wrapped in foil

• 1 teaspoon smoked paprika

• 1 teaspoon sea salt

• 2 sprigs thyme

• Vinegar

• 2 lemons, juiced

Directions

1. Preheat the oven to 400F.

2. On an oiled baking tray place the chilies and the foil wrapped garlic.

3. Keep in oven for about 20-25 minutes, the chilies should be blackened and blistering. 4. Remove from oven and let them cool slightly. When cooled de-stem the chilies and chop finely. Remove the seeds from one of the bonnet peppers (keep the seeds in the peppers if you like your hot sauce super-hot).

5. Take the garlic from the foil and remove their skin.

6. Take your blender, or hand mixer and blend the peppers, garlic, paprika, salt and thyme until they form a puree.

7. Add lemon juice and 1.5 tablespoon vinegar. Blend again for 5 seconds.

8. Store in jar or empty bottle.
