Beer Brats
Beer brats are a crowd pleaser. I’m always asked why my brats taste so good. Simmering them on the grill in beer with butter and onions is the trick. It also helps to finish the brats off on the grill grates to get a little crunchy contrast in flavor. The brats are fully cooked and heated through after being in the beer simmering, so the direct fire is just to give that extra eye and taste appeal. In this case, the grill marks really do matter.
MAKES: 5 servings | PREP TIME: 10 minutes | GRILL TIME: 25 minutes plus 5 minutes on grates | REST TIME: serve immediately
Foil needed: 1 (12 x 9-inch) pan and 1 (12 x 12-inch) piece
1 pack brat sausages (5 count)
2 (12-ounce) beers
water, to cover sausages
4 tablespoons (½ stick) butter
1 white onion, sliced crosswise and separated into rings
hoagie rolls and prepared mustard, for serving
