Angels on Horseback

Oysters used to be so numerous in England that they had very little value and were eaten mostly by the poor. It is hard to believe, but this Victorian recipe was not considered in any way out of the ordinary. Scallops may be substituted for the oysters, in which case you have Archangels on Horseback. Serves 6.

16 large oysters

8 bacon slices, cut in half

4 slices buttered toast, with their crusts removed, cut into quarters

Open and clean the oysters. Wrap each one in a slice of bacon and secure it with a small skewer or pin. Put the wrapped oysters in a roasting pan and grill them under a broiler until the bacon is crisp.
