GREEK MEZE SPREAD

I couldn’t resist including this meze sharing board – a simple collection of dishes that are close to my heart, and can be quickly put together with minimal effort for a delicious feast inspired by summer days spent on a Greek island. See pages 106–107 for some recipes to try.

6 pita breads

280-g/10 oz. can giant beans in tomato sauce (or see recipe on page 106)

200 g/1 cup tzatziki (ready-made or see recipe on page 107)

400-g/14-oz. can stuffed vine leaves (dolmades)

200 g/1 cup hummus

250 g/9 oz. halloumi

1 tbsp sesame seeds

½ red onion, diced

250 g/9 oz. feta

4 baby cucumbers, quartered lengthways

170 g/6 oz. baby plum tomatoes

a few sprigs of fresh mint and dill

250 g/9 oz. Kalamata olives

a pinch of dried oregano

1 tbsp olive oil, plus extra for frying

1 tbsp white wine vinegar

1 Little Gem/Boston lettuce, 8 leaves removed

½ watermelon, sliced into 1-cm/½-in. triangles

2 tbsp runny honey

lemon wedges, to serve

salt and freshly ground black pepper
