Procedure:

1. Slice zucchinis lengthwise in thin strips as possible. Trim or remove the end part.

2. In a 7x11 inch baking dish, place zucchini, balsamic vinegar, olive oil and salt.

3. Marinate for an hour or overnight and keep in the fridge.

4. Serve and enjoy.

5. Squash Salad

Ingredients:

2 tbsp basil (sliced into thin strips)

2 small yellow squash (sliced thinly)

2 tbsp olive oil

1 thinly sliced zucchini

1 tbsp lemon juice

¼ cup chopped marcona almonds

¼ tsp salt (Celtic sea salt)

Procedure:

1. Combine zucchini, squash, lemon juice, olive oil, basil and salt in a medium-sized bowl.

2. Toss all the ingredients together.

3. Marinate it for 20 minutes to an hour.

4. Sprinkle with almonds.

5. Serve and enjoy.
