Mashed Turnips

Wash, pare, and dice turnips. Cook in boiling salted water until tender. Drain, mash, and season with butter, salt, and pepper.

Turnip Puff

Mix together 2 cups hot mashed turnip and 2 cups hot mashed potato. Season with celery salt and pepper, and stir in 3 tablespoons butter, 2 tablespoons light cream, 1 well-beaten egg, and 1 teaspoon dry mustard. Pour into a buttered casserole and bake in a hot oven, 400 degrees, 20 minutes. Serves 6.

Creamed Turnips
