Cream puffs have been a favorite Wisconsin State Fair food for many years. With their cream filling and powdered sugar topping, they are messy to eat but oh, so good!

Have you ever eaten a cream puff? It’s a kind of dessert “sandwich.” It is made by splitting a special pastry puff in half, filling it with whipped cream, and topping it with powdered sugar.

One of the best places to get a cream puff in Wisconsin is at the State Fair, which takes place every summer at State Fair Park in West Allis, near Milwaukee. Cream puffs are one of many special Wisconsin dairy foods served at the fair—and they are probably most people’s favorite, too! Members of the Wisconsin Bakers Association bake large pastries, fill them with mounds of real whipped cream, and sell them at the fair. Cream puffs became popular at the State Fair in the 1940s, during World War II. Cream was in short supply then, so visitors to the fair would line up by the hundreds to get a cream puff.

State Fair visitors still line up for cream puffs. Nowadays the Wisconsin Bakers Association serves more than 50,000 cream puffs each day at the State Fair!
