Skate wing with brown butter

The meaty skate is actually a species of ray. It once featured regularly on fish and chip shop menus but it has declined in popularity over the years, which is probably no bad thing for stocks. Many different types of skate are caught off British shores but ask only for blonde and thornback as they are the most sustainably fished.

2 x 500-g fresh skate wings

100 g flour, seasoned with salt and freshly ground black pepper

beurre noisette (see page 172)

1 tablespoon olive oil, for frying

100 g unsalted butter, for frying
