Do keep your eye on this one. It is thick in parts so it is not to be rushed, causing it to burn before cooking on the inside. Having said this, lamb is best pink. But if that is not your thing, cook on low heat for an extra 15 or 20 minutes. And let it sit, covered, at the edge of the firepit for 20 minutes. The green masala marinade is a base paste that can be also be used for curries. Just fry in a little oil, add some cubed lamb or beef, top with water and cook over very low heat until the meat is fork tender.
