This dish and the tuna recipe that comes next are very similar. The fish are both very meaty and both are cooked in a marinara sauce, one on the stove and one in the oven, with different ingredients. The secret here is to prep the sauce ahead of time.

6 tbsp. olive oil

1 small red onion, thinly sliced

1 cup black olives, pitted and cut in half

5 cloves garlic, smashed

2 cups canned tomato puree

2 cups cherry tomatoes, cut in half

Salt and pepper

4 swordfish steaks, about 6 oz. each

2 tsp. fresh oregano, finely chopped

2 tsp. fresh basil, finely chopped
