Olive Oil Cookies
Have you ever prepared sweets with olive oil? Maybe you think it’s a silly thing to do, but olive oil brings out wonderful flavors. These light and crunchy cookies are incredible and you will love them for sure.
Preparation Time: 20 minutes
Cooking time: 15 minutes
Makes: 12 cookies
List of Ingredients:
1 oz. fresh yeast
1¼ lb. pastry flour
1½ cups sugar
1 cup extra-virgin olive oil
½ tsp. anise seeds
½ cup brandy
2 oz. almonds
AAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAA
Instructions:
1. Combine yeast with some warm water.
2. Place aside for 10 minutes.
3. Sift the flour in a bowl. Add the sugar. Stir in the yeast.
4. Heat some olive oil in a small skillet. Add the anise seeds and fry until fragrant.
5. Remove from the heat and stir in the remaining oil.
6. Pour the oil in a flour mixture and start to stir.
7. Add the brandy and start kneading until the dough just start to gather.
8. Process the almonds in a food blender until you have a fine almond powder. Stir the ground almonds into the dough and knead until the dough is smooth.
9. Cover the dough with plastic wrap and place in fridge for 24 hours.
10. Heat oven to 375F and line a baking sheet with a parchment paper.
11. Shape the dough into balls and press to flatten. Arrange cookies onto baking sheet.
12. Bake 15 minutes or until golden. Serve at room temperature.
