Roasted Shrimp with Saffron Potatoes and Tomato Mirliton Relish

The mirliton is a tropical green squash—a staple in many Cajun homes, where it’s often stuffed with bread crumbs and seafood. Cajuns might find my relish quirky, but I like its cool, delicate flavor against the spicy roasted shrimp. If you can’t find mirlitons, also known as chayote or christophine, you can substitute cucumbers. When you invite your guests for this dinner, alert them not to wear a favorite white linen shirt, since they’re going to be peeling their own shrimp. Of course, once they taste this dish they won’t mind a bit. Just be sure to provide warm, damp cloths for cleaning up after the main course.
