Refreshing labneh – strained yogurt – is a good source of filling protein, essential for muscle and bone health, and contains probiotics, supporting a healthy gut microbiome.

Serves 4

Prep 5 mins

2 tbsp olive oil

4 tbsp za’atar spice mix

4 large slices of bread, ideally gluten-free

140g (5oz) labneh yogurt, shop-bought or prepare by straining unsweetened Greek yogurt through a muslin for 12 hours

Put the olive oil and za’atar in a small bowl and stir to combine. (This mixture can be prepared in advance and refrigerated for up to 1 month.)

Toast the bread then divide the labneh evenly on top of each piece of toast and top each slice with 1 tablespoon of the za’atar mix. Enjoy while the toast is warm.

Flex it – For a vegan option, swap the labneh in this recipe for a thick unsweetened non-dairy yogurt.
