LYCHEE-SMOKED DUCK BREASTS
SMOKED DUCK IS WONDERFUL IN ALL ITS INCARNATIONS, BUT WHEN COMBINED WITH THE RICH caramelization and crisp skin that grilling adds, this dish is a must! If you are using a charcoal grill, serve with the Whole Grilled Onions that accompany the Tea-Brined Pork Chops (page 167). Duck breasts vary in size depending on the type and age of the duck, but the most commonly available breasts are in the 12- to 14-ounce/340- to 400-gram range for a ready-to-split whole breast. Lychee tea has a sweet aroma that goes well with assertive meats such as duck, as well as with other poultry.
