Ortega-Braised Chicken

with Wild Morels

Serves 4

4 chicken quarters, skin on

2 Tbsp extra virgin olive oil

Coarse sea salt and cracked black pepper

1 cup all-purpose flour

¼ lb side bacon, cut into 1-inch pieces

1 lb fresh morels

1 garlic clove

1 medium sweet onion, diced

2 Tbsp thyme leaves, plus a few sprigs to garnish

½ cup whipping (35%) cream

8 carrots, halved lengthwise and then cut into 3-inch pieces

3 cups Ortega white wine
