PORK CUBANO SANDWICHES
This is a sandwich that eats like a meal. As in a traditional Cuban sandwich, this version features two types of pork, but I’ve cut the fat in this decadent dish by using lean pork tenderloin for one of them. You’ve got to be prepared to get a little messy when eating this overstuffed sandwich. But believe me, it’s well worth the cost of a few extra napkins. SERVES 4
½ pork tenderloin (½ pound), halved crosswise
Salt and freshly ground black pepper
1 ham steak (6 ounces), quartered
2 whole-wheat demi baguettes (about 5 ounces), sliced in half crosswise and then in half horizontally
2 tablespoons spicy brown mustard
4 slices light Swiss cheese
8 sandwich slices kosher dill pickles
