THE ASIAGO CHEESE AND PEPPERONI BAGEL

A CERTAIN NATIONAL BAGEL CHAIN serves an asiago bagel that is very cheesy and makes a superb sandwich. I took a good thing and made it better by adding pepperoni and a snappy, spicy kick. Grind the pepperoni finely; it needs to disperse evenly to avoid oily pockets in the baked bagel. A sprinkling of more cheese on the top of the bagel before baking means a bronzed frico surface. Turkey pepperoni is acceptable but may not be as kicky as pork pepperoni. Omit the pepperoni for vegetarian friends and increase the cheese to 140 g [5 oz] (an additional 1/2 cup grated).

These bagels dry out quickly. If not consuming within 1 day, freeze them as soon as they are cool.
