Hot Honey Peach Chicken
Gina My mom taught me every chicken dish she knew, so when I first started cooking for my family, I “chickened” them to death. Spenser used to complain, “I’m gonna grow feathers!” Pat and I were a young couple, and chicken was very affordable, so I tried to come up with new ways to serve it, so my girls wouldn’t get tired of the same thing every night. This dish was a winner. The honey and peach nectar add a sweetness that balances out the spice of the chipotle chili powder and Dijon. The secret ingredient here is really the peach nectar. It adds a subtle, fresh peach flavor to the dish and gives the chicken a juicy glaze. Now it no longer looks like boring baked chicken … again!
⅓ cup honey
4 tablespoons salted butter, melted
¼ cup peach nectar
1 tablespoon Dijon mustard
1 teaspoon chipotle chili powder
Kosher salt and freshly ground black pepper
3½ pounds chicken pieces (breasts, thighs, drumsticks)
