Fresh tarragon – 2 tbsp., chopped

Salt – ¾ tsp.

Olive oil – 3 tbsp.

Dry white wine - 1/3 cup

Butter – 1 tbsp.

Garlic cloves – 2, minced

Whole-wheat breadcrumbs – 1 ½ cups

fresh basil – 3 tbsp., chopped

Oregano – 3 tbsp.

Parsley – 3 tbsp.

Instructions:

Start by preheating the oven to 350 degrees F.

Next, sprinkle the fish on the inside with ¼ tsp. of salt and heat oil in a pan over medium heat.

Add the fish to the pan and pour in the wine. Bake it in the oven for 50 minutes until it is opaque at the center.

Then, heat the rest of the oil, garlic and butter in a skillet and add the basil, breadcrumbs, oregano, remaining salt and parsley.

Cook this while often stirring for the breadcrumbs to get toasted. 4 minutes.

Then, score the skin of the fish around the gills and then pull it off toward the tail carefully. Get rid of the skin, then spread the breadcrumb mixture you made earlier all over the fish and press it gently.

Put it back in the oven and cook for a further five minutes.

Serve hot and enjoy.
