âMy favorite dessert is apple pandowdy. Itâs simple, delicious,
and the perfect reminder not to judge a book by its cover.â
Miss Alice Elizabeth Connelly â Baker
Alice placed the dough on the floured counter and sprinkled it lightly with flour. âTell me more about these contests you have scheduled this week, Miss Maude.â
âI donât like to get too ahead of myself. Best to take things one day at a time.â Miss Maude made an exaggerated motion with her hand, knocking her chef hat sideways. âThe pie contest is first, and all the money raised will go towards funding our community Christmas dinner and help spread good cheer to families who might need a bit of assistance this winter. The next few contests will be more about gathering things we need to celebrate withâperhaps a turkey or two, ingredients for pies, and a Christmas tree.â
Isabelle extended the rolling pin to Alice. âI think I may as well give up. The edges of my pie end up burning, cave in, or the filling breaks away from the crust.â
Evie joined Betsy and Annie, and they took their seats at the counter. Annie scrunched her nose. âMy sister, Carolâs cookies have burnt edges and are too crunchy.â
âSometimes it takes a while to master the temperature of the oven.â Aliceâs lips curved upward. âWhile working at the bakery, I learned to create the fluted edge and lattice-technique crust. I prefer recipes that are more about flavor than presenting a beautiful display.â Alice applied gentle pressure to the dough with the rolling pin and rolled outward from center to edge. âOne of my favorite memories is helping my mother in her diner make apple pandowdy and shoo-fly pie. Both recipes are easy and delicious.â
âI like the sound of that. Are you going to enter one of your motherâs recipes into the contest?â Isabelle poured three glasses of milk and gave each girl a small plate of cookies.
âSince we have an abundance of apples, I thought apple pandowdy would be perfect.â
âWhatâs a pan-dow-dee?â Evie took a bite of cookie.
âDowding means you break up the pastry with a knife and press it into the fruit juices or sometimes drop the dough by spoonfuls rather than rolling out a top crust. Itâs delicious but doesnât have as nice a presentation as a decorative technique like a lattice or fluted edge.â
âSince this is a contest, I had my heart set on finally perfecting the braided edge my mother makes, but I like the sound of your recipe.â Isabelle stepped closer, studying Aliceâs method as she lifted and turned the dough, rolling outward again from the center.
âWhile itâs not the prettiest of pastries, what it lacks in presentation is more than made up in the flavorful filling.â Alice looked up from rolling the pastry. âWhy donât you and I both bake one?â
âI love that idea.â Miss Maudeâs round cheeks rose with her smile. âOne of you can roll out the crust, and the other use the spoonful technique. That way, the desserts will look a bit different.
