It was in moments like these that I felt the constraints of social expectation: in Pakistan, young people weren’t supposed to express their opinions candidly, and it certainly wasn’t the behaviour expected of young women. But standing up to make my voice heard was a part of my nature – one I found hard to give up even years later, for it was a way of exerting my independence and dislike for conformity.

Yakhni chicken pullao

Weekend comfort in a bowl, this is my mother’s signature chicken pullao recipe (pictured here). ‘Yakhni’ refers to the stock used in the dish, which is infused with nourishment from the chicken on the bone and the spices.

Prep time: 20 minutes + 1 hour soaking

Cooking time: 1 hour and 20 minutes

Serves 4–6

250 g (1¼ cups) basmati rice

100 ml (3½ fl oz) sunflower oil

1 teaspoon black peppercorns

1 cinnamon stick

2 star anise

1 teaspoon cloves

1 black cardamom pod

3–4 green cardamom pods, bruised

4–6 skinless chicken legs (thighs and/or drumsticks), on the bone

2 teaspoons cumin seeds

1 teaspoon coriander seeds

2 bay leaves

1 large red onion, thinly sliced

1 teaspoon finely grated ginger

1 teaspoon crushed garlic

salt, to taste

1 green chilli, deseeded and chopped
