Alu Koni Pitika

Mashed Potatoes and Eggs

Ingredients

Potatoes

:

4 medium-sized

Eggs

:

2

Finely chopped onion

:

1 medium-sized

Chopped green chillies

:

2

Chopped coriander leaves

:

1 tbsp

Mustard oil

:

1½ tsps

Salt

:

to taste

Method

§Boil and peel the potatoes and eggs.

§Mash them together, adding the chopped onion, chopped green chillies, chopped coriander leaves, mustard oil and salt.

§ Serve alu koni pitika with rice, daal and a piece of lemon.

Note: Alu koni pitika with yellow gram daal made with drumstick leaves is a great combination. Instead of boiled eggs, 2 ripe and baked olives can be added, and so can a tablespoon of kharisa.

It is said that alu pitika of Assam is so delicious that the British forgot their own recipe of mashed potatoes when they tasted it.
