Snapper with fennel & roman beans
Serves 4
Any firm, white-fleshed fish will get a lift from the fresh aniseed flavour of the fennel. Roman beans are also known as romano beans – they’re flatter and longer than normal green beans, with an intense sweet green-bean flavour. Potatoes with garlic and parsley on the side are the perfect accompaniment.
4 x 180 g (6½ oz) snapper fillets, boned, skin on
2½ tbsp olive oil, plus extra to serve
4 roman beans
250 g (9 oz) cherry tomatoes
12 basil leaves
