I IMAGINE THAT DIRTY RICE, a traditional Cajun rice pilaf, was created as a way to ensure that no parts of a bird went to waste and to add flavor to plain rice. Here I have reinvented dirty rice, replacing the white rice with millet and the giblets with a mixture of tempeh and porcini, cremini, and shiitake mushrooms. The tempeh and mushroom mixture adds depth, making this a filling main dish.

YIELD 4 to 6 servings

½ cup sliced dried porcini mushrooms

2 cups boiling water

2 tablespoons plus 1 teaspoon extra-virgin olive oil, plus more for drizzling

½ cup finely diced yellow onion

½ cup finely diced green bell pepper

½ cup diced celery, strings removed

⅛ teaspoon cayenne pepper

¾ teaspoon coarse sea salt

6 ounces tempeh, crumbled

1 tablespoon tamari

4 ounces cremini mushrooms, stemmed and thinly sliced

4 ounces shiitake mushrooms, stemmed and thinly sliced

1 cup millet, soaked in water overnight and drained well

1 cup vegetable stock, homemade or store-bought

Freshly ground black pepper

2 tablespoons minced flat-leaf parsley
