Go to market on Friday instead of Saturday and avoid the crowds. Try to get there early and get these at their freshest, because the longer they are handled the less vitamins they retain. INGREDIENTS

DIRECTIONS

6 sweet potatoes, medium size

Peel and boil in salted water, until tender. Put through a potato ricer and mash thoroughly.
