Ingredients

½ cup dry mushrooms, soaked for 2 hours

2 ½ pounds sauerkraut, rinsed and drained

1 pound smoked bacon, diced

2 medium yellow or white onions, peeled and thinly sliced

3 pounds sausages (or different meats like ham), cut into bite-size pieces

16 ounces tomato paste

3½ ounces plum jam

1 teaspoon dry marjoram

½ teaspoon cumin

Salt and black pepper, to taste

Directions

Drain the mushrooms, chop them, and discard the water.

Rinse the sauerkraut with cold water, then transfer it to a medium saucepan and cover it with water. Bring it to a boil, and let it cook for 16 minutes, then drain it and place it aside.

Place a large pan over medium-high heat, then cook in it the bacon for 8 to 10 minutes until it becomes golden brown. Drain it and place it aside.

Add the onion to the same pan, and cook it for 6 to 8 minutes until it becomes transparent.

Transfer the onion with bacon, meat, sauerkraut, chopped mushrooms, and tomato into a large pot, then season them with cumin, marjoram, a pinch of salt, and pepper.

Stir the mixture well until everything is well combined, then transfer it to the pan where you cooked the onions, and fry the mixture for minutes until it starts to be golden.

Serve your stew warm and enjoy.
