Spanish Rice

SERVES: 4 | PREP TIME: 10 MINUTES | COOK TIME: 20 MINUTES

Spanish rice is a great alternative to plain white rice. It’s simple and quick to prepare.

2 tablespoons extra-virgin olive oil

1 medium onion, finely chopped

» 1 large tomato, finely diced

» 2 tablespoons tomato paste

» 1 teaspoon smoked paprika

1 teaspoon salt

» 1½ cups basmati rice

3 cups water

1 . In a medium pot over medium heat, cook the olive oil, onion, and tomato for 3 minutes.

2 . Stir in the tomato paste, paprika, salt, and rice. Cook for 1 minute.

3 . Add the water, cover the pot, and turn the heat to low. Cook for 12 minutes.

4 . Gently toss the rice, cover, and cook for another 3 minutes.

VARIATION TIP: I like to add freshly chopped cilantro right at the end of cooking for the color and the peppery flavor from the cilantro leaves.

STORAGE TIP: This rice can be made ahead and stored in an airtight container in the fridge for up to 3 days.
