Three Bean Mix

Serves 2

Prep time 5 minutes

Cook Time 7 minutes

Ingredients

1 (10 oz.) can garbanzo beans

2 minced garlic cloves

1 (10 ounces) can red kidney beans

2 tbsps. fresh parsley, minced

1 (10 oz.) can white kidney beans

¼ cup olive oil

½ onion, minced

1 cup cherry tomatoes, halved

¼ cup radish, diced

1 avocado diced

Juice of 1 lemon

Ground black pepper and salt to taste

Directions

Heat oil in a skillet.

Add onion, cherry tomatoes and garlic to sauté for 2 minutes.

Stir in all the remaining ingredients.

Cook for 5 minutes with occasional stirring

Mix well and serve.
