Baked Coconut Chicken

Ingredients

2 large eggs

2 tsp. of garlic powder

1 tsp. of salt

½ tsp. of ground pepper

¾ cup of panko bread crumbs

¾ cup of shredded sweetened coconut

1 pound of chicken tenders (about 8 tenders)

Cooking spray

Directions

Preheat air fryer to 400oF.

Spray a substantial preparing sheet with cooking spray

In a wide shallow dish, add the eggs, garlic powder, salt and pepper. Whisk until combined.

In a second-wide shallow dish, add the panko breadcrumbs and shredded coconut.

Stir to combine.

Dip the chicken tenders in the egg mixture. Coat both sides. Take the chicken out of the egg and enable the abundance to trickle off.

Place the egg covered chicken into the coconut blend.

Press the coconut blend into the chicken ensuring that every one of the sides are totally covered. Place the coconut coated chicken on the prepared baking sheet.

Discard excess egg and coconut mixture. Splash the tops of the chicken tenders with cooking spray.

Bake in the air fryer for 12 – 14 minutes, until the chicken is cooked through and turn golden brown and its crisp
