chicken kofta curry

Serves 4

Preparation time 15 minutes

Cooking time 25 minutes

750 g (1½ lb) minced chicken

2 teaspoons peeled and finely grated fresh root ginger

2 garlic cloves, crushed

2 teaspoons fennel seeds, crushed

1 teaspoon ground cinnamon

1 teaspoon chilli powder

cooking oil spray

500 ml (17 fl oz) tomato passata with onions and garlic

1 teaspoon ground turmeric

2 tablespoons medium curry powder (see page 16)

1 teaspoon agave syrup

salt and pepper

To serve

100 ml (3½ fl oz) fat-free natural yogurt, whisked

pinch of chilli powder

chopped mint leaves
