Sushi History: Nobuyuki Matsuhia, known to the world as Nobu, is a master chef with restaurants stretching over three continents. His unique style, known as Nobu stlye, was influenced by his years in Peru, where he absorbed the culture and incorporated it into traditional Japanese dishes. His creations of contrasting and unexpected ingredients have earned him many culinary awards and accolades. After finishing high school in Japan, he began his training, spending years busing tables, washing dishes, and cleaning until finally becoming a chef. Nobu's career spans many years of hard work and determination, from Japan to Peru to Argentina to Alaska, where a fire destroyed his restaurant and left him financially ruined. Nobu went on to open another restaurant in Beverly Hills nine years later, which is where he met Robert Di Nero. In 1994, he and Di Nero opened Nobu New York, which was followed in the years to come by restaurants all over the world. Today, Nobu Matsuhisa is a much respected celebrity chef and restaurateur who takes pride in the artistry of his dishes, insisting upon using only the finest ingredients and providing flawless service.
