Emergency Cake

Cake! It’s bread that has dreams, as my wise friend John once told me. But it’s inconveniently difficult to make, and it requires, you know, bowls and whisks and whatnot. Also, if you make a cake or even buy a cake, you now have a whole cake to deal with, which is great if you continue to desire cake at a steady or even increasing rate, but kind of a curse if you’re done after a slice and the rest of it is just hanging around going stale. Mug cakes solve both these problems because, as the name suggests, they are the size of a mug and require only a mug. The problem is that they’re often tough because it’s easy to overcook them, or they have streaks of flour in there because, you know, you’re just mixing things in a mug and not being all that thorough (nor should you have to be).

The secret to making mug cakes that don’t suck is, first, to err on the size of undercooking rather than overcooking them. And second, rather than futzing around with butter, eggs, and all the other cake trappings, what if … you didn’t? In fact, what if you turned to an ingredient that already has heavy cream, sugar, and eggs in it—namely, ice cream? [Hold for applause.]
