Preheat the oven to 350°F.

In a medium bowl, toss the mushrooms with the oil. Sprinkle with the Herbes de Provence and stir to coat evenly.

Place the mushrooms on a baking sheet. Bake for 10 minutes, tossing twice, or until browned.

Super-duper quick and easy, these marinated mushrooms can be served as an appetizer or a side dish with steak, salmon, or baked chicken. Quick variations can be made by adding one or more finely chopped fresh herbs, such as oregano or marjoram.
