Directions:
1. Heat oil in a medium sized saucepan placed over medium heat.
2. When oil is ready, add in ginger and chopped garlic, stirring well to combine. Cook for roughly 5 mins., frequently stirring.
3. After this, add in squash, your favorite kind of soy sauce and vegetable stock. Stir to combine.
4. Cover and allow to simmer for the next 10 minutes. Remove the lid and add in green beans. Cook for at least 3 more mins. or until green beans are tender to the touch.
5. Add in onions and continue to cook for an additional minute. Remove from heat.
6. Serve over rice and with the coriander leaves as garnish.
