3 beets, roasted, peeled

1 cup (225 grams) Sauerkraut

Whole grain mustard

Lettuce or sprouts, optional

Instructions :

Preheat the oven to 400°F.

Remove the greens and trim the beets to the base.

Remove the tail as well.

Put the beets in a lidded pot and fill them with water.

Roast covered for 45 minutes. Let it cool.

Next, peel the beets. Slice them into thin discs.

Spread a generous amount of mustard on two slices of bread.

Place a layer of beets.

Top with a few tablespoons of sauerkraut.

Sprinkle with lettuce or sprouts.
