Cook the rice following the packet instructions until tender. Drain and leave to cool slightly while you prepare the rest of the salad. (The rice can either be served slightly warm or at room temperature.)

Meanwhile, blend together all the ingredients for the dressing, adding 2 tablespoons of water until smooth and creamy. Season well with salt and pepper.

Steam the broccoli for 3 minutes or until just tender, then refresh under cold running water. Slice the stems diagonally and tear the florets if large.
