1½ cups plain non-dairy milk, warmed to room temperature

¼ cup dark brown sugar, firmly packed, or coconut sugar

1 (¼-ounce) packet (1¾ teaspoons) active dry yeast

½ cup plus 2 tablespoons vegan butter, divided

¾ cup pumpkin puree

⅓ cup aquafaba

1½ teaspoons salt

6½–7½ cups all-purpose flour, divided

1 tablespoon fresh rosemary, roughly chopped

1 tablespoon fresh thyme, roughly chopped

1 tablespoon fresh parsley, roughly chopped

Coarse or flaky sea salt, to garnish (optional)

In a medium bowl, combine the non-dairy milk, sugar, and yeast. Let stand for 10 to 15 minutes, until the yeast reactivates and becomes slightly frothy.
