We wanted to make a vegetarian version of our Perfect Chicken Parm and it needed to be packed with flavour. So we decided to do it with aubergine (eggplant). This is really saucy and comforting and a delicious alternative to the chicken version.

SERVES 2

3 decent-sized aubergines

100g cherry tomatoes, halved

Olive oil (or rapeseed oil)

1 tsp chilli flakes

1 tsp garlic granules

Salt and pepper

1 onion, finely chopped

2 garlic cloves, minced

1 × 400g tin of chopped tomatoes (San Marzano tomatoes are incredible in this dish)

A handful of fresh basil, chopped, plus extra to garnish

80g light mozzarella, grated

30g Parmesan, grated
