Golden Corn Pudding

Dairy-Free • Vegetarian • Kids Love It

Fresh corn right off the cob is juicy and bursting with sweet flavor. When I was a child, my mother always told us to make a wish on the year’s first fresh corn on the cob. I was always tempted to wish there was more corn on the table! Corn pudding was a familiar dish in my house and the recipe we used was adopted from our Pennsylvania Dutch relatives living in the States. If you have time, cut the corn kernels off the cob for a real treat.

SERVES 4

PREP: 10 minutes

COOK: 35 minutes

¾ cup unsweetened coconut milk, at room temperature

3 eggs

3 tablespoons coconut oil, melted, plus extra for greasing the baking pan

2 tablespoons honey

2 tablespoons whole-wheat flour

1 teaspoon baking powder

¼ teaspoon sea salt

4½ cups corn kernels

1. Preheat the oven to 350°F.

2. Lightly grease an 8-by-8-inch square baking dish with coconut oil and set aside.

3. In a large bowl, stir together the coconut milk, eggs, coconut oil, and honey.

4. Stir together the flour, baking powder, and sea salt in a small bowl.

5. Add the dry ingredients to the wet ingredients and stir until smooth.

6. Stir the corn kernels into the batter until well mixed.

7. Spoon the batter into the baking dish and bake until the pudding is set, about 35 minutes.

8. Let the pudding cool for about 10 minutes. Serve warm.

SUBSTITUTION TIP: There are many high-quality flash-frozen vegetable products that are perfectly fine for clean-eating recipes. Try frozen corn kernels in the same amount after thawing them completely.
