To prepare seasoning and chicken, combine the chicken with rice wine, pureed ginger, kosher salt & ground pepper, as desired, in a large bowl. Toss well. Set aside.
Mix baking powder and corn starch in a large-sized plastic bag. Add chicken wings. Coat well by shaking them. Shake wings to get rid of the excess coating.
Heat the oil in the skillet on med-low till it reaches 330 degrees F. Drop chicken wings into the oil. Deep-fry them for 3 to 4 minutes. If oil gets bubbly, reduce heat to low.
After the initial fry in step 3, you will fry the wings again. Raise heat to med. and wait till the oil is about 350 degrees F. Add chicken again to heated oil. Deep-fry for a minute or two till the coating has turned a deeper golden brown. Shake excess oil from the chicken and place wings on the wire rack to drip off the remainder of excess oil.
Use a pastry brush to apply sauce to chicken wings while hot. Garnish the wings with chopped nuts or sesame seeds and serve.
